Ingredients

  1.  ½ tablespoon dried minced onion
  2.  2 cups of cooked, shredded chicken 
  3. Mixed vegetables (sweetcorn, green beans and peas)
  4. 1 can (10 ounces) of cream of chicken soup or  mushroom soup cream
  5.  Sour cream (or mayonnaise and plain Greek yogurt)
  6. 1 cup milk
  7. Cheese 
  8. Seasonings (salt, black pepper, red pepper flakes, onion powder, garlic powder, and dried thyme to enhance the flavor of the casserole)
  9. 2  ½ cups uncooked egg noodles  
  10. Ritz crackers or  bread crumbs combined with melted salted butter; we will not add margarine. Margarine won’t brown and crisp up the topping the same as real butter will.

Procedure

1. Cook noodles: Bring a large pot of salted water to a boil. Cook the egg noodles for 6 minutes, then rinse with water to prevent them from overcooking and becoming floppy.

2. Mix up the chicken and vegetables: Combine the cooked chicken, frozen vegetables, and onion in a large bowl.

3. Add wet ingredients and seasonings: Add the cream of chicken soup, sour cream, milk, salt, pepper, red pepper flakes, onion powder, garlic powder, and thyme to the bowl and stir to combine.

4. Add the noodles: Stir the cooked egg noodles into the mixture.

5. Add some cheese: Add 1 cup of the shredded cheddar cheese and mix well until combined.

6. Transfer to a dish. Pour the chicken mixture into the prepared baking dish.

7. Make the Ritz topping: Place the outer covering of Ritz crackers in the bowl of your food mixer . Pulse six times to break up the crackers slightly. Drizzle with the melted butter. Next, pulse 6–8 times until the cracker resembles crumbs and the melted butter has been absorbed.                                                                                 

8. Add the Ritz topping and cheese. Sprinkle the crackers over the top of the chicken mixture, and top with the remaining shredded cheese.

9. Bake and serve: Lastly, place the dish in the preheated oven and bake at 350 degrees F for 35 minutes, or until the top is golden brown and the sides are bubbly. Serve immediately.

  • chicken or vegetable broth (1 ⅓ cup)

  • milk ( cup )
  • all-purpose flour or gluten-free flour ( cup )
  • fresh mushrooms finely-chopped (½ cup)
  • garlic powder (¼ teaspoon)
  • onion powder (¼ teaspoon)
  • black pepper (¼ teaspoon)

Instructions

  • Add chicken or vegetable stock to a medium saucepan.
  • Bring to a boil over medium-high heat.
  • In a separate bowl, mix together the milk and flour until flour is dissolved.
  • Slowly pour the milk mixture into the boiling broth and whisk to completely combine.
  • Stir in the mushrooms and and spices.
  • Reduce the heat to medium and let it come to low boil, stirring constantly.
  • Continue to boil for 3 minutes or until thickened.
  • Remove pan from heat.
  • Store in an airtight container in the refrigerator for up to 7 days if not using right away

Creamy Chicken Noodle Soup Recipe 😋

Ingredients

  1. chicken broth  (6 cups)
  2. water (5 cups)
  3. Salt to taste
  4. 3-4 chicken thighs, 3 to 4, skinless (bone-in or boneless)
  5. olive oil (2 Tbsp)
  6.  onion,  one finely chopped
  7. carrots (3), 2 carrots grated, 1 carrot sliced into thin rings or half circles
  8. celery stalks, 2 medium, finely chopped or thinly sliced if you prefer
  9. pasta 2 cups like rotini, egg noodles, or your favorite kind
  10. corn, 1 cup from 15-ounce can, or preferably 1 cooked cob
  11.  unsalted butter (4 Tbsp)
  12.  all-purpose flour (1/3 cup)
  13. heavy cream (1/2 cup)
  14. fresh or frozen dill (3 Tbsp)
  15. 1 tsp. Mrs. Dash or your favorite salt-free seasoning

Procedure

  • take a large soup pot to combine  broth, water and  salt. Bring to a boil, then add chicken thighs (no need to trim fat), and boil uncovered 20 minutes. Skim off impurities that rise to the top.
  •  Add 2 tablespoons olive oil to a pan  over medium heat. Add chopped onion and sauté until softened for 5 minutes, then increase heat and add grated carrots and chopped celery and sauté for 5 to 7 minutes, stirring often, until soft and golden, then transfer to soup pot.
  • Remove chicken thighs from the pot for cooling , then shred the chicken.Return shredded chicken to the pot
  • Add 2 cups pasta, sliced carrots and corn to the soup pot and continue cooking 15 minutes at a low boil until pasta is at desired softness. You can skim off any excess oil from the top at this point if you want the soup to be a little lighter.
  • In another sauce pan, melt 4 tablespoons of butter, whisk in 1/3 cup flour and cook, whisking constantly for 1 to 2 minutes to  turn golden. Ladle 1 cup of hot broth from the soup pot into flour mixture, whisking continually until well blended, then whisk in 1/2 cup heavy cream and transfer mixture to the soup pot, stirring until well blended.
  • Season soup with 1 teaspoon of Mrs. Dash (or your favorite salt-free seasoning) and more salt to taste if needed. Add 3 tablespoons of dill, then return to a boil and turn off the heat.

  • Cook the flour mixture for one minute by stirring continually.
  • To avoid lumps, slowly add 1 cup of chicken broth while stirring constantly.
  • Slowly pour in 1 cup of milk and mix regularly.
